Homemade Pasta


I made this pasta tonight, and, to use a phrase from my friend Celina, "Oh My Yum!" It was delicious. I read the reviews in advance, and they recommended using olive oil isntead of water, and to let it sit 15 to 30 minutes after kneading to let the gluten do its thing.

This is a photo of my finished product: I tossed it with sundried tomato and parmesan oil, sauted summer squash/garlic/onion and cherry tomatos, and ate it with a piece of salmon. SSSO delicious, super easy, and I will definitely make this again!

Basic Pasta

INGREDIENTS (Nutrition)
1 egg, beaten
1/2 teaspoon salt
1 cup all-purpose flour
2 tablespoons water

DIRECTIONS
In a medium sized bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.
On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or by hand roll dough out to desired thinness. Use machine or knife to cut into strips of desired width.

Ok, finally I get a minute to comment on your post! I think this sounds and looks DELICIOUS and I want to try it, but my husband WILL NOT eat fish.......so, I guess maybe I will be trying it when I'm home alone...which is rare. I'll let you know how that goes!
